What the Pink in Your Deli Meat Really Is
That color is chemistry, not freshness.
Fresh cooked meat is grayish-brown. So why is deli ham and turkey a cheerful pink? Say hello to nitrites.
Color and preservation
Sodium nitrite keeps cured meats pink and holds off bacteria. Useful — but under high heat and in the gut, nitrites can form nitrosamines, compounds linked in research to elevated cancer risk with heavy processed-meat intake.
"Uncured" isn't a loophole
Labels that say "uncured" or "no added nitrites" often use celery powder — a natural source of the exact same nitrites. Different label, similar chemistry. It's marketing more than a meaningful change.
The move
Processed meat is fine occasionally; the concern is a daily habit. When you can, choose freshly roasted meat from the counter over long-shelf-life packaged slices.
